The anchovy from the Cantabrian Sea, due to the climatic characteristics of the area, has an incomparable texture and flavor, very appreciated. They have a reddish brown color. The fishing season takes place in April and a selection is made once on land. They are then cleaned and the thorns removed in the traditional way.
