Since 1974, El Xillu has been part of l’Escala, a town on the Costa Brava bathed by the Mediterranean. This seafaring town is known throughout the world for its ancient activity, and for preserving anchovies in salt. The Xillu, heir to this family tradition, has preserved and improved the traditional methods of anchovy preparation.
