El Xillu has been located in l’Escala, a town on the Costa Brava, bathed by the Mediterranean, since 1974. This seaside town is known the world over for an activity it has engaged in for over a thousand years, namely the production of canned anchovies in salt. El Xillu, legacy of this family tradition, has maintained and honed traditional anchovy preparation methods.
