Tuna is fished in the Sea of the Azores, the Atlantic islands of Portugal. Fishing is done with the so-called “Salto e Vara” technique, with fishing rod, in this way tuna is fished in a sustainable and controlled way.

Fishing “Jump and Rod”:

  • It does not endanger other smaller species or fish (as opposed to using a net).
  • Quality is prioritized over quantity.

After the fishermen of the island get the best larger tuna, this if cleaned and packed by hand by 120 national women.

  • First wash the tuna with sea water and cook it.
  • Then they clean it manually. The tuna peels, remove the thorns and blood.
  • Finally, they separate each part of the tuna and canne it manually.

Without emulsifiers, additives, preservatives… The product and preparation is 100% artisan. The result is a tender and pinkish tuna, at the right point of salty flavor and that keeps its nutritional properties intact.

Delicacy is not only in tuna. The surprising and original touch is in the flavors cans, which combine the best fish with flavors such as fennel, oregano, pepper, thyme, the Portuguese salsa molho cru, etc.

These ingredients, such as bell pepper or molho cru, are also grown on the island of San Jorge and are prepared by hand.
