Description

Oro Bailén is obtained from olives harvested at the beginning of November, just when they are about to reach optimal ripeness.

The harvesting and transport of the olives from field to mill is performed continuously throughout the day to prevent the olives from fermenting. The oil is extracted at a temperature below 22°C and is then filtered and stored with inert gas (nitrogen) for optimal conservation.
